sweet potato peels by Food Sins
sweet potato skins by Food Sins
I tend to use a lot of sweet potatoes. Not only they taste amazing they also are great to you. But as a consequence I get a lot of sweet potato skins, so I decided to make a little treat out of them. 
It tastes so good it's almost a sin.
Enjoy!

You'll need:
Sweet potato skins
1 tbs olive oil
1/4 tsp cumin
1/4 tsp garlic powder

What to do:
(optional) place the peels, with a decent amount of flesh on the skin, in a pot with water. Bring to a boil and simmer just until the peels are tender 

Drain the skins and dry them, then place them on a sheet pan. 

Brush the peels with the olive oil and sprinkle them with the cumin and garlic powder. 

Bake at 220C/425F until the peels are brown and crispy

Tips:
Don't let them boil for more than 1 minute to keep them crispy

Ideas:
Serve them on a newspaper cone or with several dips like garlic maionese, green salt, guacamole and/or just ketchup.

The perfect company for a cup of tea, when you have unannounced visitors or when you just need something sweet on a short amount of time.
It tastes so good it's almost a sin.

You'll need:
1 Large Egg
3 tbs of brown sugar
2 tbs of milk
1 tbs of ginger (juiced or finely chopped)
3 tbs of flour
1 tsp of cinnamon
1 tsp of baking powder
1/2 apple (finely chopped)
icing sugar (to sprinkle)

What to do:
Just add everything on the cup (except the icing sugar), mix until the dough is homogeneous.
Cook it on the microwave for 2 minutes at high power
Sprinkle with icing sugar

Tips:
Sprinkle the icing sugar with the aid of a strainer
Multiply the ingredients and serve it on small cups for a fast and delicious dessert for a lot of people

Ideas:
As always use your imagination, change the ingredients and try a banana and chocolate cake or even a carrot and orange cake and top it with Greek yogurt.
